“The fact that we are small batch and a very small producer, it takes much more skill from a blender to put together a consistent profile because the law of averages is against us. I may only have 45 barrels to work with whereas a large-scale producer might have 400 barrels to work with.”

“We don’t use flavor grains like rye or wheat in our mashbill. We just use corn and barley so we tend to have a sweeter bourbon. Corn has that sweetness and then we use new american oak barrels for aging. The barrels can impart spice, vanilla and oak notes so my job is to balance all of those flavors.”

“Believe it or not, I used to wear suits every day when I worked at a magazine and I loved it. But one of the reasons why I took this job full time is that from the time I started my first job in middle school through college my work was always manual labor. Then I got to New York and I spent 12 years behind a desk in a dark room. I just was aching to get back to something physical again.”

“This is a small business so if the stairs need to be swept, I am going to sweep them. I could be in a sales meetings, I could be proofing the tank of product or helping set-up for an event. From creating whiskey to sweeping the floor to projecting what we’ll be releasing next year those are the reasons why I love this job.”
